Stovetop (recommended):

In a non-stick 12" skillet, warm a few drops of olive oil over a medium flame. Pour in frozen contents of Piazza Italia Mushroom Medley.

Cook for 4-5 minutes over a high flame, stirring occasionally.


Arrange frozen mushrooms in a single layer on a microwaveable plate.

Microwave uncovered on HIGH for approximately 2 minutes or until heated through and sauce is steaming.

Add fresh chopped parsley and sprikle with grated parmesan cheese to bring out full flavor.

Let stand one minute before serving.

Wild Mushroom Risotto

  • Approximately 35 minutes Cooking Time

  • 1 bag Piazza Italia Mushroom Medley
  • 1 1/2 cups white risotto rice
  • 3 cups warm stock
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 2 tbsp grated parmesan cheese
  • 1/2 onion (chopped)
  • fresh chopped parsley
  • pepper
  • salt
  • 1) In a pan, warm the olive oil and 1 tbsp of butter. Sautee chopped onions until golden.
  • 2) Add frozen contents of Piazza Italia Mushroom Medley and risotto rice.
  • 3) Mix in warm broth, adding one ladle at a time until absorbed by the rice, stirring frequently.
  • 4) Continue stirring frequently until the rice is thoroughly cooked (about 30 minutes).
  • 5) Add the remaining butter, parsley, parmesan cheese, salt and pepper (to taste).
  • 6) Let sit for 2 minutes and serve warm.
